Get the most nutrition out of your fruits and vegetables:
  • Prepare them just before you eat them.
  • Cook with skins on.
  • Steam or roast.
  • Cook very briefly-the longer you cook them the more vitamins and minerals you lose.
  • Cook large chunks rather than small pieces.
  • Cover and refrigerate juices after opening, drink as soon as possible.
  • Eat them raw whenever possible.
